How to make poqui-poqui

Make what? If you haven’t heard of poqui-poqui, then you are missing out on one of the best vegetarian dishes in the Philippines.

Poqui-poqui (sometimes spelled as poki-poki or puki-puki, haha) is a simple dish. It is basically scrambled eggs with pieces of grilled eggplant. It is like tortang talong, but tastes much better.

This dish originated in the Ilocos Region. I tried to find out what the weird name means but not even my Ilocano friends can give an answer. But who cares why it is called that – it is delicious and healthy and that is all I care about ๐Ÿ™‚

For 2 servings, we will need:
1 large eggplant
2 eggs, beaten
1 medium onion, chopped
1 large native tomato, deseeded and chopped
1-2 cloves garlic, chopped
Salt and pepper to taste
Cooking oil

Let’s get cooking!
1. Grill the eggplant over charcoal or over a gas stove until the skin is charred.
2. Cool before removing the skin and chopping the eggplant.
3. In a pan, heat oil and saute garlic, onions, tomatoes.
4. Mix in chopped eggplant and season with salt and pepper.
5. Pour beaten eggs into pan and cook as you would ordinary scrambled eggs.
6. Serve with steaming rice.

My finished product does not look very appetizing, does it? ๐Ÿ˜€ I think I scrambled the eggs a little too vigorously. I would have wanted larger clumps of egg and not this wet-looking lump.

Still, it’s the taste that matters and you can take it from me: it is so good, I don’t even need to have a meat dish to complete my lunch.
