Being a very busy person (with two jobs and all), I really don’t have a lot of time to make elaborate lunch boxes. Even if I wanted to, it just isn’t possible. So I am a fan of Biggie of Lunchinabox.net (the reigning queen of speed bento!!) and store-bought food! In fact, I never run out of hotdogs and ham and chicken nuggets in my freezer — for days when I am too lazy to cook from scratch. I even cook large batches of rice and freeze them so I can just reheat or make fried rice.
Bento #34 is no exception. The star of the meal: Purefoods Chicken Nuggets. I just pan-fried them instead of deep frying (per the package instructions) because I am not a fan of deep frying. To make my lunch more exciting, I piled on various meat, egg and vegetable sidings.
I have carrots and asparagus sauteed in olive oil, iridofu, takuan, okra, broccoli, hotdog ball wrapped in bacon. That yellow thing in front is quail egg simmered in a curry powder-soy sauce mixture — idea from Lunchinabox.net. The curry taste was very subtle, just the way I like it.
I had leftover rice which I made into fried rice by adding egg and seasoning, then topping with bell pepper flowers for color.
