Adobo is arguably the top dish for many Filipinos, myself included. It is such a big favorite that we make adobo out of anything. Aside from the usual pork or chicken, we have adobong kangkong, squid adobo, adobo sa gata, adobong sitaw, adobo mushrooms, adobo snails and the list goes on.
We even make adobo out of leftover meat. Today, I made adobo flakes fried rice and I am sharing the recipe here. Seriously, I didn’t want to even call it a recipe because it’s so simple. 🙂
What you need:
1. Leftover rotisserie chicken (shredded) – about 2 cups. Mine do not look shredded because I used a pair of shears instead 🙂
2. Cooked rice – 3 cups
3. Garlic – 1 whole head, crushed
4. Vinegar – 1 cup
5. Knorr liquid seasoning – 1/4 – 1/2 cup, depending on your taste
6. Pepper to taste
7. Oil -2 tbsps
Let’s cook!
1. In a pan, heat cooking oil and cook 3/4 of the garlic until light brown. Take extra care not to burn the garlic becaue it will give a bitter taste to your dish.
2. Put in the meat and fry for 2 minutes.
3. Pour in the vinegar and liquid seasoning and simmer for about 5 minutes.
4. Stirfry for 5 minutes and remove from the pan.
5. In the same pan, add a little bit of oil and the remaining garlic.
6. Add the rice. Season with liquid seasoning and pepper to taste.
7. Add back the adobo flakes and stir well to evenly incorporate the meat into the rice.
8. Serve hot.
This is perfect for any time of the day. You may also serve this with sunny side up eggs on top for a more substantial meal.
